Baked Aloo Gobhi (Cauliflower with Potatoes)

Do you have busy weekdays like me and want dinner to be ready in less than one hour? Try this recipe of Baked Aloo Gobhi (Cauliflower with Potatoes) which is fuss free, full of flavor and very easy to make.

Ingredients

  • 1 head of Cauliflower Florets
  • 2 Medium Red Onions diced
  • 3 Medium Potatoes diced
  • 4 tbsp Regular or light Olive Oil
  • 1 tsp Cumin Seeds
  • ¼ tsp Asafetida Powder Hing
  • 1 tsp Turmeric Powder
  • 2 tsp Red Chili Powder
  • 3 tsp Coriander Powder
  • 1& ½ tsp Garam Masala
  • 1 tsp Grated Ginger
  • 1 tsp Minced Garlic
  • 2 tsp Onion Powder
  • 1 & ½ tsp Salt
  • 2 tbsp Water
  • ½ tsp Lemon Juice
  • Fresh Cilantro for garnishing

Instructions

  • Keep your oven to preheat at 400-degree F. Take a large baking tray and line it with aluminum foil.
  • In a large mixing bowl, take 1 head of washed cauliflower florets, to which add 3 medium diced potatoes and 3 medium diced red onions. Give them a toss.
  • In another small bowl, take 4 tbsp regular or light Olive oil. To which add 1 tsp Cumin Seeds, ¼ tsp Asafetida Powder (Hing), 1 tsp Turmeric Powder, 2 tsp Red Chili Powder, 3 tsp Coriander Powder, 1 & ½ tsp Garam Masala, 1 tsp Grated Ginger, 1 tsp Minced Garlic, 2 tsp Onion Powder, 1 & ½ tsp salt, 2 tbsp water, and stir well.
  • Pour the prepared seasoning over the vegetables and toss them well using clean hands until all the veggies are coated evenly with the spices. (Refer to the video)
  • Transfer them onto the tray and spread them evenly. Bake it in the oven at 400 F for 40 mins.
  • Remove the tray from the oven and drizzle ½ tsp lemon juice over Aloo Gobhi and garnish with some fresh cilantro.
  • Serve hot with roti/paratha or any other Indian flat bread of your choice.
  • Enjoy!
