Italian Tea Cookies
This is easiest, light, delicious and pretty looking cookie recipe! Perfect to have it with your morning and evening tea/coffee.
Ingredients
- ½ cup Unsalted Butter Soften at room temperature
- 2/3 cup Granulated Sugar
- 2 Eggs
- 2 tsp Vanilla Extract
- 1 & ½ cup All Purpose Flour divided
- 2 tsp Baking Powder
- ½ tsp Salt
- 2 tbsp Cocoa Powder
- 2 tsp Granulated Sugar for coating
Instructions
- In a large mixing bowl take ½ cup unsalted butter (soften at room temperature), 2/3 cup granulated sugar and mix them together using a handheld electric mixture until they become creamy (refer to the video).
- Add 2 eggs, 2 tsp vanilla extract and mix again using the electric mixture until everything is well incorporated.
- Remove 2 tbsp of all purpose flour from 1 & ½ cup All Purpose Flour and keep it aside.
- Now sieve in the remaining all purpose flour, 2 tsp baking powder and ½ tsp salt into the same large mixing bowl.
- Using a spatula, fold in the dry ingredients with the wet ingredients. Make sure there are no dry flour lumps remaining. But do not over mix it.
- Divide this cookie batter equally in two different bowls.
- In one bowl, sieve in 2 tbsp of cocoa powder, and in another bowl sieve in 2 tbsp of all purpose flour that we had kept aside initially. Mix them individually. Cover the cookie dough and place them in the fridge for 15 minutes.
- Preheat your oven to 375 degrees, line a couple of baking sheets with parchment paper and set aside.
- Using a small cookie scoop, scoop out and roll all the dough individually (the chocolate and vanilla). Then take one of each, attach them together (refer to the video) and roll around in between your palms to combine them (watch video for clear instructions).
- Then gently dip just the top half of the cookie ball in granulated sugar and place them a couple inches apart on your baking sheet lined with parchment paper. (refer to the video).
- Repeat the same process until you use up all the cookie dough.
- Bake them at 375 F for 8 to 10 minutes or until the bottom is lightly golden. Allow to cool them completely and serve.
