Pancake Cereal

Cereal Pancakes are a great twist to the regular pancakes. They look cute and is very convenient to eat. Children as well as adults love this. To make it healthier and colorful, add some berries to it.

Ingredients

  • 1 cup All Purpose Flour
  • 1 tsp Salt
  • 1 tbsp Sugar
  • 1 tsp Baking Powder
  • 1 Egg
  • 1 cup Milk
  • Butter (for cooking)
  • Blueberries (handful)
  • Maple Syrup (to drizzle)

Instructions

  • Sieve 1 cup all purpose flour into a mixing bowl. Add 1 tsp salt, 1 tbsp sugar, 1 tsp baking powder, 1 egg and mix everything well using a whisk.
  • Little by little stir in 1 cup of milk. Mix well. Make sure there are no lumps.
  • Now transfer the batter into a squeeze bottle with a small opening. If you don’t have a squeeze bottle, you can transfer the batter into a piping bag. If you don’t have piping bag, use a ziplock bag. Just when you are ready to cook, cut a tiny tip and use it like a squeeze bottle.
  • Heat a non- stick pan on medium heat. Glaze the pan with some butter.
  • Squeeze tiny amount of batter on the pan that replicates mini pancakes. It should not be bigger than the size of a dime. Squeeze out multiple such mini pancakes covering the entire pan.
  • Flip the pancakes once the bottom side is cooked. (It should not take more than 1 min). Continue cooking it until they are golden brown. (Approximately 30 secs more).
  • Remove the mini pancakes into a serving bowl. Add some handful of blueberries or any other berry of your choice.
  • Drizzle some good Canadian Maple Syrup over it and relish!

Notes

  • It is important to sieve the flour to avoid big lumps as they can make it difficult to squeeze out the batter.
  • Also, do not over mix the batter.
