Roasted Baby Potatoes

Roasted baby potatoes are a crispy delight. Since they’re oven roasted, you don’t have to worry about the excessive oil that goes into deep frying. These are crispy on the outside and tender in the center. They make for a great side dish.

Ingredients

  • 1.5 lbs Baby Potatoes (approx 35 baby potatoes)
  • 1 tbsp Butter
  • 2 tbsp Light Olive Oil
  • ½ tsp Salt
  • ½ tsp Garlic Powder
  • ½ tsp Black Pepper Powder (or as desired)
  • ½ tsp Dried Parsley

Instructions

  • Thoroughly wash all the potatoes and scrub the potatoes well using a vegetable brush.
  • Preheat the oven at 400 degrees F.
  • Cut the potatoes in half and transfer them into a mixing bowl.
  • Melt 1 tbsp butter in the microwave in a microwave safe bowl.
  • In the same bowl of melted butter, now add 2 tbsp light olive oil, ½ tsp salt, 1 tsp garlic powder, ½ tsp pepper powder and ½ tsp dried parsley. Stir them well together using a spoon.
  • Pour this butter and herb mixture in the Potato bowl and mix well. Make sure the potatoes are well coated.
  • Line a baking sheet with parchment paper. Then spread the potatoes evenly onto the lined baking sheet. Make sure the potatoes are evenly spread on the baking sheet.
  • Bake them for 20 mins at first. Remove the baking sheet from the oven, flip the potatoes using a tong, and bake for another 20 mins.
  • Serve hot!

Notes

  • If the potatoes aren’t golden brown and crispy by the end of 40 mins, bake them for another couple of mins.
  • You can use fresh minced garlic instead of garlic powder as well. I prefer garlic powder as it is easy to spread evenly.
