I love sipping on something chilled and tangy throughout the summer. One other thing I love indulging in, are summer fruits; kiwis, berries etc. you name it. Now club these two together and you got yourself SUMMER POPSICLE.
Why make SUMMER POPSICLE?
Firstly, its delicious! Secondly, you can make it at home in no time with just a handful of ingredients. Unlike store bought popsicle, there are no artificially added colors or flavors which makes it ideal for children. In the hot months of July and August, I prefer serving popsicles to my guests as dessert and they all love it! It makes for the perfect colorful ending to your barbeque nights.
Which FRUITS should I use?
Use any of your favorite citric and juicy fruits like raspberry, peach, kiwi etc. Do not use dense fruits like apples or pears.
Can I substitute the sugar with something else?
Absolutely! Instead of sugar, you can use maple syrup or honey. Just remember to dissolve the maple syrup or honey in lemon juice first before adding it to the water.
Easy way to remove popsicle from the mold?
Take piping hot water in a heat resistant glass. Hold the popsicle in the water for 30 secs and it will slide out easily.

Summer Popsicle
Equipment
- Popsicle Mold (I have included a link of the one I used above)
Ingredients
- 1 pinch Salt
- 1/4 cup Lemon juice
- 1 cup Chilled water
- 1 Chopped Kiwi
- Handful Chopped pitted Cherry
- Handful Blueberry
- Handful Chopped strawberry
Simple Syrup
- 1/4 cup sugar
- 1/4 cup water
Instructions
- First, we shall begin with making a sweet lemonade. For which take 1/4th cup sugar and 1/4th cup water in a saucepan and keep stirring it on low heat until all the sugar is melted. This is basically your simple syrup.
- Take 1 cup of chilled water, to which add 1/4th cup of freshly squeezed lemon juice, a pinch of salt and the above prepared simple syrup. Give it a stir and your sweet lemonade is ready. Keep refrigerated if not using right away.
- Now take you popsicle mold. Then equally distribute the fruits in all 6 molds. First layer of 1 chopped kiwi, then handful of chopped pitted cherries, followed by handful of blueberries and finally handful of chopped strawberries.
- Then pour the sweet lemonade into the popsicle mold. Fill it completely leaving a little space on top for the handle to fit. Tightly place the popsicle handle and let the popsicle freeze for atleast 8 hours or overnight in the freezer.
- Enjoy the Summer Popsicle!
