Avocado Toast with Poached Eggs

IS AVOCADO A FRUIT OR A VEGETABLE?

This is the question I get asked most frequently. Avocado is a fruit, native to south – central mexico. It has a creamy and fleshy texture and is not very sweet, which makes it ideal to smear over toast and eat it in savory form.

Avocado is rich in nutrients, healthy fat and loaded  with potassium (more than banana) and also fiber; which is exactly what you need to fuel up in the morning.

WHICH BREAD TO USE FOR THIS RECIPE?

My personal favorite is Italian or Sourdough bread. But you can use any bread of your choice.

WHAT IF I DON’T EAT/LIKE EGGS?

You can completely skip the eggs. Add any topping of your choice like grilled cherry tomatoes, sautéed mushrooms, pickled onions, roasted pine nuts, etc

I personally like to add pine nuts as they are not only extremely nutritious but also adds a nice crunchy texture to the Avocado Toast.

Avocado Toast with Poached Eggs.

Avocado toast is an open sandwich with mashed avocados. Add an egg over it, and it makes for a perfect breakfast/brunch recipe. It is easy, quick and healthy, which is just what you need in your busy mornings

Ingredients

  • 1 Avocado
  • 2 Bread Slice of your choice
  • 2 Eggs
  • 2 tsp Lemon juice
  • 1 tsp Dried Parsley
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp Distilled White Vinegar
  • 2 tbsp Melted Butter
  • Roasted pine nuts- handful (optional)

Instructions

  • Spread butter generously on each side of the bread and place them on a non-stick grill/flat pan over medium heat and toast it on both sides. You can also toast the bread slices in a toaster and then glaze melted butter on it.
  • Fill a deep skillet halfway with water and bring it to a boil. Meanwhile, break each egg into small bowls or cups. Once the water is boiled, add 1 tbsp vinegar to the water.
  • Slowly add each egg into the simmering water. Let it cook for no more than 1 minute. Then turn the heat off, place the lid on the skillet and let them sit in the water for exactly 4 minutes.
  • Gently take the poached eggs out of the water while shaking off the water from it and place it on a plate.
  • Cut 1 avocado and add the avocado pulp in a small bowl. Mash it with a masher or back of the fork. Then add 2 tsp lemon juice, 1 tsp dried parsley, salt and pepper. Mix it well together.
  • Divide the avocado mixture in equal parts and smear it on the 2 bread slices.
  • Gently take the poached eggs and place one egg on each avocado toast. Sprinkle some salt, pepper and handful of roasted pine nuts(optional).
  • Serve immediately!

Notes

  • Don’t skip on the butter.
