Avocado toast is an open sandwich with mashed avocados. Add an egg over it, and it makes for a perfect breakfast/brunch recipe. It is easy, quick and healthy, which is just what you need in your busy mornings
Spread butter generously on each side of the bread and place them on a non-stick grill/flat pan over medium heat and toast it on both sides. You can also toast the bread slices in a toaster and then glaze melted butter on it.
Fill a deep skillet halfway with water and bring it to a boil. Meanwhile, break each egg into small bowls or cups. Once the water is boiled, add 1 tbsp vinegar to the water.
Slowly add each egg into the simmering water. Let it cook for no more than 1 minute. Then turn the heat off, place the lid on the skillet and let them sit in the water for exactly 4 minutes.
Gently take the poached eggs out of the water while shaking off the water from it and place it on a plate.
Cut 1 avocado and add the avocado pulp in a small bowl. Mash it with a masher or back of the fork. Then add 2 tsp lemon juice, 1 tsp dried parsley, salt and pepper. Mix it well together.
Divide the avocado mixture in equal parts and smear it on the 2 bread slices.
Gently take the poached eggs and place one egg on each avocado toast. Sprinkle some salt, pepper and handful of roasted pine nuts(optional).
